Kuku na Wali wa Nazi (Tanzanian Chicken and Coconut Rice)
A fragrant and flavorful one-pot dish featuring tender chicken simmered with aromatic spices and cooked in creamy coconut milk infused rice. This dish is a celebration of Tanzanian flavors.

🧂 Ingredients
- 500 g Chicken thighs(boneless, skinless, cut into bite-sized pieces)
- 2 tbsp Vegetable oil
- 1 large Onion(finely chopped)
- 3 cloves Garlic(minced)
- 1 inch piece Ginger(grated)
- 2 tbsp Curry powder
- 1 tsp Ground turmeric
- 1 tsp Ground cumin
- 1 cup Diced tomatoes
- 1 can (13.5 oz) Coconut milk
- 1 cup Water or chicken broth
- 1.5 cups Basmati rice(rinsed and drained)
- 1 tsp Salt(or to taste)
- 0.25 cup Fresh cilantro(chopped, for garnish)

Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Add chicken pieces and cook until lightly browned. Remove chicken and set aside.

Add chopped onion to the pot and sauté until softened, about 5 minutes. Add minced garlic and grated ginger and cook for 1 minute until fragrant.

Stir in curry powder, turmeric, and cumin. Cook for 1 minute until spices are fragrant.

Add diced tomatoes and cook for 2-3 minutes, scraping up any browned bits from the bottom of the pot.

Pour in coconut milk and water or chicken broth. Bring to a simmer. Stir in the rinsed basmati rice and salt. Return the chicken to the pot.
