Kumara and Feta Fritters - New Zealand traditional dish

🧂 Ingredients

  • 500 g Kumara (sweet potato)(peeled and grated)
  • 150 g Feta cheese(crumbled)
  • 4 stalks Spring onions(finely chopped)
  • 1/4 cup Fresh parsley(chopped)
  • 2 tbsp Fresh mint(chopped)
  • 1 large Egg
  • 1/2 cup All-purpose flour
  • 1 tsp Baking powder
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper(freshly ground)
  • 2-3 tbsp Vegetable oil(for frying)

👨‍🍳 Instructions

  1. 1

Squeeze excess moisture from the grated kumara using your hands or a clean tea towel.

  2. 2

In a large bowl, combine the grated kumara, crumbled feta, chopped spring onions, parsley, and mint.

  3. 3

In a separate small bowl, whisk the egg, flour, baking powder, salt, and pepper until just combined.

  4. 4

Add the wet ingredients to the kumara mixture and stir until everything is well incorporated. The mixture should hold together when pressed.

  5. 5

Heat vegetable oil in a large non-stick frying pan over medium heat. Spoon tablespoonfuls of the mixture into the hot pan, flattening them slightly with the back of the spoon.

  6. 6

Cook for 3-4 minutes per side, or until golden brown and cooked through. You may need to cook in batches.

  7. 7

Drain the fritters on paper towels and serve hot.

💡 Pro Tips

  • Ensure kumara is well-drained to prevent soggy fritters.
  • Don't overcrowd the pan when frying.
  • Serve with a dollop of sour cream or a side salad.

🔄 Variations

  • Add a pinch of chili flakes for a spicy kick.
  • Substitute spinach for mint for a different flavor profile.
  • Use grated parsnip or carrot along with kumara.
