🧂 Ingredients
- 500 g White fish fillets(such as tilapia, catfish, or snakehead, cut into 2-inch pieces)
- 200 ml Coconut milk
- 1/2 cup Dill(chopped)
- 1/4 cup Green onions(chopped)
- 1/4 cup Cilantro(chopped)
- 2 stalks Lemongrass(thinly sliced, tender inner part only)
- 1 inch piece Galangal(grated or finely minced)
- 3 cloves Garlic(minced)
- 2 medium Shallots(chopped)
- 1-2 Thai chilies(optional, finely chopped, adjust to taste)
- 2 tbsp Fish sauce
- 1 tsp Sugar
- 8-10 pieces Banana leaves(wilted over heat or hot water to make pliable)
- Toothpicks or kitchen twine(for securing)
👨🍳 Instructions
- 1
Prepare the aromatics: In a mortar and pestle or food processor, pound or blend lemongrass, galangal, garlic, shallots, and chilies (if using) into a coarse paste.
💡 Tip: Ensure the lemongrass is finely processed to avoid tough fibers. - 2
In a bowl, combine the fish pieces, coconut milk, chopped dill, green onions, cilantro, the aromatic paste, fish sauce, and sugar. Mix gently to coat the fish evenly.
💡 Tip: Do not overmix, as this can break up the fish too much. - 3
To assemble the parcels: Lay out a piece of banana leaf. Place a portion of the fish mixture in the center. Fold the leaf to create a neat parcel, securing with toothpicks or kitchen twine.
⏱️ 15 minutes - 4
Arrange the parcels in a steamer basket over simmering water. Cover and steam for 25-30 minutes, or until the fish is cooked through and flakes easily.
⏱️ 30 minutes💡 Tip: Ensure there is enough water in the pot to steam for the entire duration. - 5
Carefully remove the parcels from the steamer. Serve hot, opening the banana leaves at the table to release the aromatic steam.
