A hearty and flavorful Macedonian white bean soup, slow-cooked with smoked meat and vegetables for a deeply satisfying meal.

🧂 Ingredients
- 500 g Dried white beans(soaked overnight or quick-soaked)
- 300 g Smoked pork ribs(cut into pieces)
- 1 large Onion(chopped)
- 2 medium Carrots(diced)
- 2 diced Celery stalks
- 4 minced Garlic cloves
- 2 tbsp Tomato paste
- 2 liters Water or vegetable broth
- 2 Bay leaves
- 1 tsp Dried mint(optional, but traditional)
- to taste Salt
- to taste Black pepper
- 2 tbsp Vegetable oil or lard
👨🍳 Instructions
- 1
Drain the soaked beans and rinse them thoroughly.
💡 Tip: Ensure all soaking water is discarded. - 2
In a large pot or Dutch oven, heat oil or lard over medium heat. Add chopped onion and cook until softened, about 5-7 minutes.
- 3
Add diced carrots and celery, and cook for another 5 minutes.
- 4
Add minced garlic and cook for 1 minute until fragrant.
- 5
Stir in the tomato paste and cook for 1-2 minutes, stirring constantly.
- 6
Add the drained beans, smoked pork ribs, bay leaves, and water or broth to the pot.
💡 Tip: Ensure beans and meat are fully submerged. - 7
Bring the soup to a boil, then reduce heat to low, cover, and simmer for at least 1.5 to 2 hours, or until beans are very tender.
💡 Tip: Stir occasionally to prevent sticking. Add more liquid if the soup becomes too thick. - 8
Remove the bay leaves and smoked ribs. If desired, shred the meat from the ribs and return it to the soup.
💡 Tip: Discard bones and excess fat from the ribs. - 9
Stir in the dried mint (if using), salt, and pepper to taste.
💡 Tip: Taste and adjust seasoning carefully, as smoked meat can be salty. - 10
Simmer for another 10-15 minutes to allow flavors to meld.
- 11
Serve hot, often with a side of crusty bread or cornbread.
💡 Tip: A dollop of sour cream or a sprinkle of fresh parsley can be added as a garnish.
