Macedonian Bean Soup (Pasulj) - North Macedonia traditional dish

🧂 Ingredients

  • 500 g Dried white beans(soaked overnight or quick-soaked)
  • 300 g Smoked pork ribs(cut into pieces)
  • 1 large Onion(chopped)
  • 2 medium Carrots(diced)
  • 2 diced Celery stalks
  • 4 minced Garlic cloves
  • 2 tbsp Tomato paste
  • 2 liters Water or vegetable broth
  • 2 Bay leaves
  • 1 tsp Dried mint(optional, but traditional)
  • to taste Salt
  • to taste Black pepper
  • 2 tbsp Vegetable oil or lard

👨‍🍳 Instructions

  1. 1

Drain the soaked beans and rinse them thoroughly.

💡 Tip: Ensure all soaking water is discarded.
  2. 2

In a large pot or Dutch oven, heat oil or lard over medium heat. Add chopped onion and cook until softened, about 5-7 minutes.

  3. 3

Add diced carrots and celery, and cook for another 5 minutes.

  4. 4

Add minced garlic and cook for 1 minute until fragrant.

  5. 5

Stir in the tomato paste and cook for 1-2 minutes, stirring constantly.

  6. 6

Add the drained beans, smoked pork ribs, bay leaves, and water or broth to the pot.

💡 Tip: Ensure beans and meat are fully submerged.
  7. 7

Bring the soup to a boil, then reduce heat to low, cover, and simmer for at least 1.5 to 2 hours, or until beans are very tender.

💡 Tip: Stir occasionally to prevent sticking. Add more liquid if the soup becomes too thick.
  8. 8

Remove the bay leaves and smoked ribs. If desired, shred the meat from the ribs and return it to the soup.

💡 Tip: Discard bones and excess fat from the ribs.
  9. 9

Stir in the dried mint (if using), salt, and pepper to taste.

💡 Tip: Taste and adjust seasoning carefully, as smoked meat can be salty.
  10. 10

Simmer for another 10-15 minutes to allow flavors to meld.

  11. 11

Serve hot, often with a side of crusty bread or cornbread.

💡 Tip: A dollop of sour cream or a sprinkle of fresh parsley can be added as a garnish.

💡 Pro Tips

  • Soaking beans overnight is recommended for best results and easier digestion.
  • Using smoked meat is crucial for the authentic flavor of this soup.
  • Don't rush the simmering process; slow cooking is key to tender beans and rich flavor.
  • Dried mint is a traditional Macedonian herb that adds a unique aroma.

🔄 Variations

  • Add a diced red bell pepper along with the other vegetables for a touch of sweetness.
  • For a vegetarian version, omit the smoked meat and use vegetable broth, adding smoked paprika for a smoky flavor.
  • A pinch of red pepper flakes can be added for a bit of heat.
