Morogo

Morogo, meaning 'wild spinach' or 'greens' in Setswana, is a staple dish in Botswana and other Southern African countries. It's a nutritious side dish made from various indigenous leafy greens, often cooked with tomatoes, onions, and sometimes groundnuts. It's typically served with pap (maize porridge) or as an accompaniment to meat dishes.

🧂 Ingredients

  • 500 g Morogo (African spinach, or substitute with spinach, kale, or Swiss chard)
  • 2 tablespoons Vegetable oil
  • 1 large, finely chopped Onion
  • 2 cloves, minced Garlic
  • 1 large, chopped Tomato
  • to taste Salt
  • to taste Black pepper
  • 1/4 cup Water or vegetable broth (optional)

👨‍🍳 Instructions

  1. 1

Wash the morogo (or spinach) thoroughly and remove any tough stems. Chop the leaves into bite-sized pieces.

  2. 2

Heat the vegetable oil in a large pan or pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

  3. 3

Add the minced garlic and cook for another minute until fragrant.

  4. 4

Add the chopped tomato to the pan and cook for 3-4 minutes, until it starts to soften and break down.

  5. 5

Add the chopped morogo (or spinach) to the pan. Stir well to combine with the onion and tomato mixture. If the greens seem dry, add a little water or broth.

  6. 6

Season with salt and black pepper to taste. Cover the pan and let it simmer for about 10-15 minutes, or until the greens are tender but not mushy. Stir occasionally.

  7. 7

Taste and adjust seasoning if needed. Serve hot as a side dish.

💡 Pro Tips

  • If using tougher greens like kale, you may need to cook them a bit longer.
  • Some variations include adding chili powder for a bit of heat, or groundnuts for added richness.
  • Morogo is best enjoyed fresh.

🔄 Variations

  • Add cooked beef, lamb, or chicken for a heartier dish.
  • A swirl of coconut cream towards the end of cooking can add a creamy texture.
  • Fresh herbs like parsley or cilantro can be added for extra flavor.
