  • 1 medium Sweet Potato (Yam)(peeled and diced)
  • 1 cup Broccoli Florets
  • 2 medium Carrots(peeled and sliced)
  • 1 cup Green Beans(trimmed)
  • 2 cups Kale or Spinach(chopped)
  • 400 g Diced Tomatoes(canned, undrained)
  • 400 ml Coconut Milk(full-fat)
  • 1 tsp Cumin
  • 1 tsp Coriander
  • 1/2 tsp Turmeric
  • to taste Salt
  • to taste Black Pepper
  • 1/4 cup Fresh Cilantro(chopped, for garnish)

    Heat olive oil in a large, heavy-bottomed pot or Dutch oven over medium heat. Add the chopped onion and sauté until translucent, about 5-7 minutes.
