Mozambique Vegetable Stew

- 1 medium Sweet Potato (Yam)(peeled and diced)
- 1 cup Broccoli Florets
- 2 medium Carrots(peeled and sliced)
- 1 cup Green Beans(trimmed)
- 2 cups Kale or Spinach(chopped)
- 400 g Diced Tomatoes(canned, undrained)
- 400 ml Coconut Milk(full-fat)
- 1 tsp Cumin
- 1 tsp Coriander
- 1/2 tsp Turmeric

- 1/4 cup Fresh Cilantro(chopped, for garnish)

Heat olive oil in a large, heavy-bottomed pot or Dutch oven over medium heat. Add the chopped onion and sauté until translucent, about 5-7 minutes.
