Mutsindish Stew
A hearty and flavorful stew made with beef, sweet potatoes, and a blend of aromatic spices, often prepared for special occasions. It's known for its rich, savory broth and tender ingredients.

🧂 Ingredients
- 1 kg Beef chuck(cut into 2-inch cubes)
- 500 g Sweet potatoes(peeled and cut into 1-inch cubes)
- 2 medium Onions(chopped)
- 400 g Tomatoes(diced)
- 4 cloves Garlic(minced)
- 1 inch piece Ginger(grated)
- 3 tbsp Vegetable oil
- 750 ml Beef broth
- 2 tsp Curry powder
- 1 tsp Turmeric
- 1 tsp Cumin
- to taste Salt
- to taste Black pepper
- 1/4 cup Fresh cilantro(chopped, for garnish)

Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Brown the beef cubes on all sides, working in batches if necessary. Remove beef and set aside.

Add chopped onions to the pot and sauté until softened, about 5-7 minutes.

Stir in minced garlic and grated ginger, and cook for another minute until fragrant.

Add diced tomatoes, curry powder, turmeric, and cumin. Cook for 5 minutes, stirring occasionally, until tomatoes start to break down and spices are fragrant.

Return the browned beef to the pot. Pour in the beef broth, ensuring the meat is mostly submerged. Season with salt and pepper.

Bring the stew to a simmer, then reduce heat to low, cover, and cook for 1 hour, or until the beef is tender.

Add the cubed sweet potatoes to the pot. Stir, cover, and continue to cook for another 20-30 minutes, or until the sweet potatoes are tender.
