Nalysnyky (Sweet Cheese Crepes)
Delicate Ukrainian crepes, known as nalysnyky, are filled with a creamy, slightly sweet farmer's cheese (or ricotta) mixture, often enhanced with raisins or dill. They are typically rolled and sometimes lightly fried or baked, offering a comforting and versatile dish perfect for breakfast, dessert, or a light meal.

🧂 Ingredients
- 1 cup All-purpose flour
- 1 cup Milk(whole milk recommended)
- 2 large Eggs
- 1 tbsp Sugar
- 0.5 tsp Salt
- 2 tbsp Butter(melted, plus more for greasing pan)
- 1.5 cup Farmer's cheese or ricotta cheese(full-fat recommended)
- 1 large Egg yolks
- 2 tbsp Granulated sugar(for filling)
- 0.25 cup Golden raisins(optional, soaked in hot water for 20 mins and drained)
- 2 tbsp Sour cream(for serving)
👨🍳 Instructions
- 1
Make the crepe batter: In a large bowl, whisk together flour, 1 tbsp sugar, and salt. In a separate bowl, whisk milk, eggs, and 2 tbsp melted butter. Gradually add the wet ingredients to the dry ingredients, whisking until smooth and no lumps remain. Let the batter rest for 15-20 minutes.
- 2
Make the filling: In a medium bowl, combine farmer's cheese (or ricotta), egg yolk, 2 tbsp sugar, and drained raisins (if using). Mix well until smooth. If the mixture is too dry, add a teaspoon of milk or cream.
- 3
Cook the crepes: Heat a lightly greased non-stick skillet over medium heat. Pour about 1/4 cup of batter into the pan and swirl to create a thin, even layer. Cook for about 1-2 minutes per side, until lightly golden. Repeat with the remaining batter, greasing the pan as needed. You should have about 8-10 crepes.
- 4
Assemble the nalysnyky: Lay a crepe flat. Spread about 2-3 tablespoons of the cheese filling evenly over the surface, leaving a small border. Fold in the sides, then roll up from one end like a jelly roll.
- 5
To serve immediately: You can lightly pan-fry the rolled nalysnyky in butter until golden brown on both sides. Serve warm with sour cream.
- 6
To bake: Preheat oven to 325°F (160°C). Lightly butter a baking dish. Arrange the rolled nalysnyky seam-side down in the dish. Pour a little sour cream or melted butter over the top. Bake for 15-20 minutes, or until heated through and lightly golden.
💡 Pro Tips
- ✓For a smoother filling, you can process the farmer's cheese or ricotta in a food processor.
- ✓If using fresh farmer's cheese, ensure it's not too wet. If it is, drain it well.
- ✓Nalysnyky can be made ahead and stored in the refrigerator for a day or two. Reheat gently in the oven or on the stovetop.
- ✓For a savory variation, omit the sugar in the filling and add fresh dill and a pinch of black pepper.
🔄 Variations
- Add a teaspoon of vanilla extract to the crepe batter for a subtle sweetness.
- For a richer filling, add a tablespoon of sour cream or heavy cream.
- Serve with jam, fresh berries, or a drizzle of honey.
