🧂 Ingredients

  • 300 g Fresh Scallops(cleaned and roughly chopped)
  • 1 cup All-purpose flour
  • 2 tsp Baking powder
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper(freshly ground)
  • 0.75 cup Milk
  • 1 large Egg
  • 2 tbsp Chives(finely chopped)
  • 1 tsp Lemon zest
  • for frying Vegetable oil

👨‍🍳 Instructions

  1. 1

In a large bowl, whisk together the flour, baking powder, salt, and pepper.

  2. 2

In a separate bowl, whisk the milk and egg. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.

  3. 3

Gently fold in the chopped scallops, chives, and lemon zest.

  4. 4

Heat about 2-3 cm of vegetable oil in a heavy-bottomed pan over medium-high heat until shimmering (around 180°C/350°F).

  5. 5

Carefully drop spoonfuls of the batter into the hot oil, being careful not to overcrowd the pan. Fry for 3-4 minutes per side, until golden brown and cooked through.

  6. 6

Remove fritters with a slotted spoon and drain on paper towels. Serve immediately.

💡 Pro Tips

  • Maintain a consistent oil temperature for even cooking.

🔄 Variations

  • Add a pinch of cayenne pepper for a little heat.
  • Serve with a dollop of aioli or a lemon wedge.
