Marlborough Sounds Scallop Fritters

- 300 g Fresh Scallops(cleaned and roughly chopped)
- 1 cup All-purpose flour
- 2 tsp Baking powder
- 0.5 tsp Salt
- 0.25 tsp Black pepper(freshly ground)
- 0.75 cup Milk
- 1 large Egg
- 2 tbsp Chives(finely chopped)
- 1 tsp Lemon zest
- for frying Vegetable oil

In a large bowl, whisk together the flour, baking powder, salt, and pepper.

In a separate bowl, whisk the milk and egg. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.

Heat about 2-3 cm of vegetable oil in a heavy-bottomed pan over medium-high heat until shimmering (around 180°C/350°F).
