Tortitas de Maíz (Paraguayan Corn Fritters) - Paraguay traditional dish

🧂 Ingredients

  • 3 cups Fresh corn kernels(from about 4-5 ears of corn)
  • 1 cup All-purpose flour
  • 1/2 cup Grated cheese(such as Paraguay cheese or mozzarella)
  • 2 large Eggs
  • 1/4 cup Milk(or more as needed)
  • 1 tsp Baking powder
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • for frying Vegetable oil

👨‍🍳 Instructions

  1. 1

In a large bowl, combine the fresh corn kernels, all-purpose flour, grated cheese, eggs, milk, baking powder, salt, and pepper.

  2. 2

Mix well until a thick batter forms. If the batter is too dry, add a little more milk, one tablespoon at a time, until it reaches a consistency that can be spooned into the pan.

  3. 3

Heat about 1/4 inch of vegetable oil in a large skillet over medium heat.

  4. 4

Once the oil is hot, carefully drop spoonfuls of the batter into the skillet, flattening them slightly with the back of the spoon to form fritters.

  5. 5

Fry for 3-4 minutes per side, until golden brown and cooked through. Work in batches, ensuring not to overcrowd the pan.

  6. 6

Remove the fritters from the skillet and place them on a plate lined with paper towels to drain excess oil.

  7. 7

Serve warm as a snack, appetizer, or side dish.

💡 Pro Tips

  • Use fresh corn for the best flavor and texture. Frozen corn can be used, but thaw and drain it thoroughly.
  • Do not overmix the batter, as this can result in tough fritters.
  • Adjust the amount of cheese to your preference.

🔄 Variations

  • Add finely chopped jalapeño for a spicy kick.
  • Incorporate a tablespoon of chopped fresh cilantro or parsley into the batter.
  • Serve with a dollop of sour cream or a side of salsa.
