Tortitas de Maíz (Paraguayan Corn Fritters)
Sweet and savory corn fritters, a popular snack or side dish in Paraguay. Made with fresh corn, flour, and a touch of cheese, they are pan-fried to a golden crisp.

🧂 Ingredients
- 3 cups Fresh corn kernels(from about 4-5 ears of corn)
- 1 cup All-purpose flour
- 1/2 cup Grated cheese(such as Paraguay cheese or mozzarella)
- 2 large Eggs
- 1/4 cup Milk(or more as needed)
- 1 tsp Baking powder
- 1/2 tsp Salt
- 1/4 tsp Black pepper
- for frying Vegetable oil
👨🍳 Instructions
- 1
In a large bowl, combine the fresh corn kernels, all-purpose flour, grated cheese, eggs, milk, baking powder, salt, and pepper.
- 2
Mix well until a thick batter forms. If the batter is too dry, add a little more milk, one tablespoon at a time, until it reaches a consistency that can be spooned into the pan.
- 3
Heat about 1/4 inch of vegetable oil in a large skillet over medium heat.
- 4
Once the oil is hot, carefully drop spoonfuls of the batter into the skillet, flattening them slightly with the back of the spoon to form fritters.
- 5
Fry for 3-4 minutes per side, until golden brown and cooked through. Work in batches, ensuring not to overcrowd the pan.
- 6
Remove the fritters from the skillet and place them on a plate lined with paper towels to drain excess oil.
- 7
Serve warm as a snack, appetizer, or side dish.
💡 Pro Tips
- ✓Use fresh corn for the best flavor and texture. Frozen corn can be used, but thaw and drain it thoroughly.
- ✓Do not overmix the batter, as this can result in tough fritters.
- ✓Adjust the amount of cheese to your preference.
🔄 Variations
- Add finely chopped jalapeño for a spicy kick.
- Incorporate a tablespoon of chopped fresh cilantro or parsley into the batter.
- Serve with a dollop of sour cream or a side of salsa.
