Patisseries aux Amandes et Miel Algériennes
Delicate Algerian almond pastries soaked in honey and flavored with orange blossom water. These treats are often prepared for special occasions and holidays.

- 500 g Almonds(blanched and ground)
- 200 g Sugar(for the dough)
- 250 g Flour(all-purpose)
- 125 g Butter(melted)
- 2 large Egg yolks
- 2 tbsp Orange blossom water
- 500 ml Honey(for soaking)
- 100 ml Water(for soaking)
- 1 tsp Lemon zest
- 1 tsp Cinnamon(for dusting)

In a large bowl, combine the ground almonds, sugar, and flour. Mix well.

Add the melted butter, egg yolks, and orange blossom water to the almond mixture. Knead until a soft dough forms. If the dough is too dry, add a little more melted butter or a splash of water.

Roll out the dough thinly (about 3-4 mm thick) on a lightly floured surface. Cut into desired shapes, such as diamonds or squares.

Place the pastries on a baking sheet lined with parchment paper. Prick each pastry a few times with a fork to prevent puffing.

Bake in a preheated oven at 180°C (350°F) for 15-20 minutes, or until lightly golden brown.

While the pastries are baking, prepare the honey syrup. In a saucepan, combine honey, water, and lemon zest. Heat gently until the honey is melted and the mixture is well combined. Do not boil.

Once the pastries are out of the oven, immediately dip them into the warm honey syrup. Ensure they are fully coated.

Remove the pastries from the syrup and let them drain on a wire rack. Sprinkle with cinnamon before serving.
