  • 400 g Chicken thighs or breast(Boneless and skinless, cut into bite-sized pieces.)

  • 10 Banana leaves(Fresh or frozen. If frozen, thaw completely. Cut into approximately 10x12 inch pieces. You'll need to soften them by passing them briefly over a flame or dipping in hot water to make them pliable.)
  • 10 Black olives(Pitted, whole olives.)
  • 5 Eggs(Large eggs, for hard-boiling.)
  • 1/2 cup Chicken broth(Or water, to moisten the masa if needed.)
  • 2 cloves Garlic(Minced.)
  • 1 tsp Cumin
  • 1 tsp Salt(Or to taste.)
  • 1/2 tsp Black pepper(Freshly ground, or to taste.)
  • 2 tbsp Vegetable oil

    Prepare the chicken filling: Heat vegetable oil in a skillet over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Add the chicken pieces, cumin, salt, and pepper. Cook, stirring occasionally, until the chicken is browned and cooked through, about 8-10 minutes. Stir in 1 tablespoon of ají panca paste and cook for another minute. Remove from heat and set aside to cool slightly. If desired, shred the chicken for easier filling.

Fold the banana leaf over the filling to enclose it, then fold the sides in to create a neat rectangular package. Secure with kitchen twine if necessary, or ensure the folds are tight.

Cover the pot tightly and steam for at least 2 hours, or until the masa is firm and cooked through. Check the water level periodically and add more boiling water if needed to prevent the pot from drying out.
