  • 1.5 kg Whole chicken(cut into serving pieces)
  • 2 large Onions(1 quartered, 1 finely chopped)
  • 3 tbsp Vegetable oil
  • 1 15 oz can Diced tomatoes
  • 1 cup Natural peanut butter
  • 1 medium Guinean pepper(seeded and sliced (or substitute with habanero or jalapeño))
  • 2 cups Chicken broth(or water)
  • to taste Salt
  • 0.5 cup Parsley(chopped)

    Season the chicken pieces with salt. In a large pot, bring salted water to a boil. Add the chicken pieces and the quartered onion. Cook over low heat until the chicken is cooked through, about 30 minutes. Turn off the heat and let the chicken cool in the broth. Reserve the broth.

    Remove the chicken from the broth, reserving both. Heat vegetable oil in a large sauté pan over medium heat. Add the chopped onion and parsley and cook until golden brown.
