- 1 medium Bell pepper(any color, chopped)
- 4 cloves Garlic(minced)
- 2 tbsp Tomato paste
- 1 can (400g) Diced tomatoes(undrained)
- 2 cups Chicken broth
- 1 tbsp Worcestershire sauce
- 1 tsp Cumin
- 1 tsp Oregano(dried)

- 1/4 cup Fresh cilantro(chopped, for garnish)

Pat the chicken pieces dry with paper towels and season generously with salt and pepper.

Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Brown the chicken pieces on all sides, working in batches if necessary. Remove chicken and set aside.

Add the chopped onion and bell pepper to the pot and sauté until softened, about 5-7 minutes.

Stir in the minced garlic and cook for 1 minute until fragrant.

Add the tomato paste and cook, stirring, for 1-2 minutes to deepen its flavor.

Pour in the diced tomatoes (with their juice) and chicken broth. Stir in the Worcestershire sauce, cumin, and oregano.
