  • 2.5 lb Chicken pieces(bone-in, skin-on thighs and drumsticks)
  • 2 tbsp Olive oil
  • 0.25 cup Sofrito(homemade or store-bought)
  • 15 oz Tomato sauce
  • 2 tbsp Tomato paste
  • 1 cup Chicken broth
  • 0.25 cup Green olives(pitted and sliced)
  • 2 tbsp Capers(drained)
  • 1 tbsp Adobo seasoning
  • 1 packet Sazón con achiote
  • 1 whole Bay leaf
  • 3 minced Garlic cloves
  • 0.5 chopped Onion
  • 0.5 chopped Bell pepper(any color)
  • 2 tbsp Cilantro(chopped, for garnish)

    Pat the chicken pieces dry and season generously with adobo seasoning. Set aside.
