🧂 Ingredients

  • 1 kg Pork belly(cut into 2-inch cubes)
  • 500 g Taro root(peeled and cut into 1-inch cubes)
  • 400 g Leafy greens(such as aibika, water spinach, or spinach, roughly chopped)
  • 400 ml Coconut milk(full fat)
  • 1 large Onion(chopped)
  • 4 cloves Garlic(minced)
  • 1 inch piece Ginger(grated)
  • 1 small Chili(optional, finely chopped)
  • to taste Salt
  • to taste Black pepper
  • 200 ml Water or stock(if needed)

👨‍🍳 Instructions

  1. 1

In a large pot or Dutch oven, brown the pork belly cubes over medium-high heat until golden on all sides. Remove pork and set aside.

  2. 2

Add the chopped onion to the pot and sauté until softened, about 5 minutes. Add the minced garlic, grated ginger, and chopped chili (if using) and cook for another minute until fragrant.

  3. 3

Return the pork belly to the pot. Add the taro root cubes and stir to combine with the aromatics.

  4. 4

Pour in the coconut milk and enough water or stock to almost cover the ingredients. Season with salt and black pepper. Bring to a simmer, then reduce heat to low, cover, and cook for at least 1 hour, or until the pork is tender and the taro is cooked through.

  5. 5

Stir in the chopped leafy greens and cook for another 5-10 minutes, or until wilted and tender. Adjust seasoning if necessary.

  6. 6

Serve hot, traditionally with a side of rice or sago.

💡 Pro Tips

  • For crispier pork, you can sear the pork belly in batches and drain excess fat before adding to the stew.
  • If taro is unavailable, sweet potato or yam can be used as a substitute.
  • Adjust the amount of chili to your spice preference.

🔄 Variations

  • Add other root vegetables like carrots or potatoes.
  • Incorporate other local greens like fern tips or pumpkin leaves.
  • For a richer flavor, a splash of fish sauce can be added.
