  • 1.5 kg Whole chicken(cut into pieces)
  • 2 large Onions(chopped)
  • 4 cloves Garlic(minced)
  • 1 inch piece Ginger(grated)
  • 400 g Tomatoes(puréed or finely chopped)
  • 1 medium Bell pepper(diced)
  • 3 tbsp Vegetable oil
  • 1 tbsp Curry powder
  • 1 tsp Thyme(dried)
  • 1 leaf Bay leaf
  • 1 optional Stock cube
  • 250 ml Water or chicken broth
  • to taste Salt
  • to taste Black pepper
  • for garnish Fresh parsley or cilantro(chopped)

    Season the chicken pieces with salt and pepper. In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Brown the chicken pieces on all sides. Remove chicken and set aside.

    Add the chopped onions to the same pot and sauté until softened and lightly browned, about 7-10 minutes.

    Stir in the minced garlic and grated ginger. Cook for 1 minute until fragrant.

    Add the puréed tomatoes, diced bell pepper, curry powder, dried thyme, and bay leaf. Cook for about 5-7 minutes, stirring occasionally, until the sauce thickens slightly.

    Return the browned chicken pieces to the pot. Add the water or chicken broth and the stock cube (if using). Bring to a simmer.
