Poulet à la Moire
Poulet à la Moire, also known as 'Chicken in the Mist', is a flavorful Cameroonian chicken dish characterized by its rich, aromatic sauce made with a blend of spices, onions, and tomatoes. It's often served with rice or fufu.

🧂 Ingredients
- 1.5 kg Whole chicken(cut into pieces)
- 2 large Onions(chopped)
- 4 cloves Garlic(minced)
- 1 inch piece Ginger(grated)
- 400 g Tomatoes(puréed or finely chopped)
- 1 medium Bell pepper(diced)
- 3 tbsp Vegetable oil
- 1 tbsp Curry powder
- 1 tsp Thyme(dried)
- 1 leaf Bay leaf
- 1 optional Stock cube
- 250 ml Water or chicken broth
- to taste Salt
- to taste Black pepper
- for garnish Fresh parsley or cilantro(chopped)

Season the chicken pieces with salt and pepper. In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Brown the chicken pieces on all sides. Remove chicken and set aside.

Add the chopped onions to the same pot and sauté until softened and lightly browned, about 7-10 minutes.

Stir in the minced garlic and grated ginger. Cook for 1 minute until fragrant.

Add the puréed tomatoes, diced bell pepper, curry powder, dried thyme, and bay leaf. Cook for about 5-7 minutes, stirring occasionally, until the sauce thickens slightly.

Return the browned chicken pieces to the pot. Add the water or chicken broth and the stock cube (if using). Bring to a simmer.

Cover the pot, reduce the heat to low, and let it simmer gently for 30-40 minutes, or until the chicken is cooked through and tender. Stir occasionally.

Taste and adjust seasoning with salt and pepper as needed. Remove the bay leaf before serving.
