🧂 Ingredients

  • 500 g Chicken pieces(cut into serving portions)
  • 300 g Tilapia fillets(cut into chunks)
  • 2 medium Onions(chopped)
  • 400 g Tomatoes(crushed or pureed)
  • 4 cloves Garlic(minced)
  • 1 inch piece Ginger(grated)
  • 250 g Peanut butter(unsweetened, smooth)
  • 1-2 pieces Scotch bonnet pepper(finely chopped, adjust to taste)
  • 3 tbsp Vegetable oil
  • 500 ml Water(or as needed)
  • to taste Salt
  • to taste Black pepper
  • 1 Bouillon cube(optional)

👨‍🍳 Instructions

  1. 1

Season chicken pieces with salt and pepper. In a large pot or Dutch oven, heat vegetable oil over medium-high heat. Brown the chicken on all sides, then remove and set aside.

  2. 2

In the same pot, add chopped onions and sauté until softened, about 5-7 minutes.

  3. 3

Add minced garlic and grated ginger, sauté for another minute until fragrant.

  4. 4

Stir in the crushed tomatoes and chopped scotch bonnet pepper. Cook for about 10 minutes, stirring occasionally, until the sauce has thickened slightly.

  5. 5

In a separate bowl, whisk the peanut butter with a little warm water to loosen it. Gradually add this to the tomato mixture, stirring well to combine.

  6. 6

Return the browned chicken to the pot. Add water (or broth) to reach desired sauce consistency. Add the bouillon cube if using. Bring to a simmer, then reduce heat, cover, and cook for 25-30 minutes, or until chicken is cooked through.

  7. 7

Gently add the tilapia chunks to the sauce. Simmer for another 5-7 minutes, or until the fish is cooked through and flakes easily. Be careful not to overcook the fish.

  8. 8

Adjust seasoning with salt and pepper if needed. Serve hot with rice or tĂ´.

đź’ˇ Pro Tips

  • âś“For a smoother sauce, you can blend the tomato and onion mixture before adding the peanut butter.
  • âś“Adjust the amount of scotch bonnet pepper to control the spice level.
  • âś“Ensure the peanut butter is well-dissolved in water before adding it to the pot to prevent lumps.

🔄 Variations

  • Add other vegetables like bell peppers or sweet potatoes.
  • Use only chicken or only tilapia if preferred.
