- 1 lb Beets(cooked and cooled)
- 8 oz Pickled herring(drained and cut into bite-sized pieces)
- 4 oz Dill pickles(diced)
- 1 medium Tart apple(peeled, cored, and diced)
- 0.5 medium Red onion(finely diced)
- 3 large Hard-boiled eggs(chopped)
- 0.5 cup Mayonnaise
- 0.5 cup Sour cream
- 1 tbsp Dijon mustard
- 0.33 cup Fresh dill(chopped)
- 0.5 tsp Salt(or to taste)
- 0.25 tsp Black pepper(or to taste)
- 2 tbsp Fresh parsley(chopped, for garnish (optional))

Boil potatoes and beets until tender. Cool, peel, and dice into 1/4-inch cubes. Hard-boil eggs, cool, peel, and chop.
