  • 1 medium Tart apple(peeled, cored, and diced)
  • 0.5 medium Red onion(finely diced)
  • 3 large Hard-boiled eggs(chopped)
  • 0.5 cup Mayonnaise
  • 0.5 cup Sour cream
  • 1 tbsp Dijon mustard
  • 0.33 cup Fresh dill(chopped)
  • 0.5 tsp Salt(or to taste)
  • 0.25 tsp Black pepper(or to taste)
  • 2 tbsp Fresh parsley(chopped, for garnish (optional))

    Boil potatoes and beets until tender. Cool, peel, and dice into 1/4-inch cubes. Hard-boil eggs, cool, peel, and chop.
