  • 400 g Tomatoes(canned, crushed or fresh, chopped)
  • 2 tbsp Tomato paste
  • 0.25 cup Palm oil
  • 2 cups Chicken broth
  • 200 g Spinach(fresh or frozen, chopped)
  • 150 g Okra(fresh or frozen, sliced)
  • 1 Bay leaf

  • 1 small Chili pepper(optional, for heat)

    Season the chicken pieces with salt and pepper. In a large pot or Dutch oven, heat the palm oil over medium heat. Add the chicken pieces and brown them on all sides.

    Stir in the crushed tomatoes, tomato paste, bay leaf, and chili pepper (if using). Cook for another 5 minutes, allowing the flavors to meld.
