Scottish Marmalade Bread and Butter Pudding
A comforting and sweet dessert pudding made from layers of buttered and marmalade-spread bread, soaked in a custard mixture, and baked until golden. It's a delightful twist on a classic bread and butter pudding, incorporating the distinct flavor of Scottish marmalade.

- 12 slices White Bread Slices(standard sandwich loaf, crusts removed)
- 100 g Butter(softened, for spreading)
- 150 g Dundee Marmalade(or other coarse-cut marmalade)
- 500 ml Full-fat milk
- 2 large Large Eggs
- 2 tbsp Caster Sugar
- 1 tsp Vanilla Essence(several drops)
- 70 g Sultanas
- 1 tbsp Demerara Sugar(for sprinkling)

Preheat your oven to 180°C (350°F). Lightly grease an ovenproof dish (approximately 20x20cm or equivalent).

Butter each slice of bread thickly and spread with marmalade. Cut each slice into quarters.

Arrange the bread quarters butter-side up in the prepared dish in layers, sprinkling half the sultanas over the first layer.

Add another layer of bread quarters and sprinkle with the remaining sultanas. Press down gently to ensure the milk mixture will be absorbed.

In a jug, beat the eggs with the caster sugar and vanilla essence.

Heat the milk in a saucepan until it just simmers (do not boil). Pour the hot milk into the jug with the egg mixture and whisk well to combine.

Slowly pour the milk and egg mixture over the bread in the dish, gently pressing down with a fork to help the bread absorb the liquid.
