Scottish Marmalade Bread and Butter Pudding - Scotland traditional dish

🧂 Ingredients

  • 12 slices White Bread Slices(standard sandwich loaf, crusts removed)
  • 100 g Butter(softened, for spreading)
  • 150 g Dundee Marmalade(or other coarse-cut marmalade)
  • 500 ml Full-fat milk
  • 2 large Large Eggs
  • 2 tbsp Caster Sugar
  • 1 tsp Vanilla Essence(several drops)
  • 70 g Sultanas
  • 1 tbsp Demerara Sugar(for sprinkling)

👨‍🍳 Instructions

  1. 1

Preheat your oven to 180°C (350°F). Lightly grease an ovenproof dish (approximately 20x20cm or equivalent).

  2. 2

Butter each slice of bread thickly and spread with marmalade. Cut each slice into quarters.

  3. 3

Arrange the bread quarters butter-side up in the prepared dish in layers, sprinkling half the sultanas over the first layer.

  4. 4

Add another layer of bread quarters and sprinkle with the remaining sultanas. Press down gently to ensure the milk mixture will be absorbed.

  5. 5

In a jug, beat the eggs with the caster sugar and vanilla essence.

  6. 6

Heat the milk in a saucepan until it just simmers (do not boil). Pour the hot milk into the jug with the egg mixture and whisk well to combine.

  7. 7

Slowly pour the milk and egg mixture over the bread in the dish, gently pressing down with a fork to help the bread absorb the liquid.

  8. 8

Sprinkle the demerara sugar evenly over the top.

  9. 9

Bake for 30-35 minutes, or until the top is golden brown and the pudding is set.

  10. 10

Let it cool slightly before serving. It can be served warm or cold, with cream, ice cream, or custard.

💡 Pro Tips

  • Using a good quality, coarse-cut marmalade will enhance the flavor.
  • Ensure the milk is hot but not boiling when adding to the egg mixture to prevent scrambling.
  • Pressing down the bread gently helps it absorb the custard mixture evenly.

🔄 Variations

  • Add a tablespoon of whisky to the milk mixture for an extra boozy kick.
  • Incorporate other dried fruits like raisins or currants along with the sultanas.
