Sesotho Mushrooms with Pap - Lesotho traditional dish

🧂 Ingredients

  • 500 g Mushrooms(sliced (e.g., button, shiitake, or mixed))
  • 1 medium Onion(finely chopped)
  • 2 cloves Garlic(minced)
  • 2 tbsp Vegetable oil
  • 2 cups Pap (Maize Meal)
  • 4 cups Water(for pap)
  • to taste Salt
  • 1/2 tsp Black pepper
  • 1 tsp Paprika
  • 1/2 tsp Dried Thyme
  • 2 tbsp Fresh parsley(chopped, for garnish)

👨‍🍳 Instructions

  1. 1

Prepare the pap: In a medium saucepan, bring 2 cups of water and a pinch of salt to a boil. Gradually whisk in 1 cup of maize meal to form a smooth, thick paste. Reduce heat to low, cover, and simmer for 15-20 minutes, stirring occasionally, until cooked through and firm. Add more water if it becomes too thick. For a softer pap, add more water during cooking.

  2. 2

While the pap is cooking, heat the vegetable oil in a large skillet over medium heat. Add the chopped onion and sauté until softened, about 5 minutes.

  3. 3

Add the minced garlic to the skillet and cook for another minute until fragrant.

  4. 4

Add the sliced mushrooms to the skillet. Cook, stirring occasionally, until the mushrooms have released their liquid and are browned and tender, about 8-10 minutes.

  5. 5

Season the mushrooms with salt, black pepper, paprika, and dried thyme. Stir well to combine.

  6. 6

Serve the seasoned mushrooms hot over a generous portion of pap. Garnish with fresh chopped parsley.

💡 Pro Tips

  • Ensure the pap is cooked until smooth and lump-free.
  • Don't overcrowd the pan when cooking mushrooms; cook in batches if necessary for better browning.
  • Adjust the spices to your preference. Other common additions include a pinch of chili flakes for a bit of heat.

🔄 Variations

  • Add a splash of cream or milk to the mushrooms at the end of cooking for a richer sauce.
  • Incorporate other vegetables like bell peppers or spinach.
  • Serve with a side of gravy or a simple tomato relish.
