Sesotho Mushrooms with Pap

- 1 medium Onion(finely chopped)
- 2 cloves Garlic(minced)
- 2 tbsp Vegetable oil
- 2 cups Pap (Maize Meal)
- 4 cups Water(for pap)

- 1 tsp Paprika
- 1/2 tsp Dried Thyme
- 2 tbsp Fresh parsley(chopped, for garnish)

Prepare the pap: In a medium saucepan, bring 2 cups of water and a pinch of salt to a boil. Gradually whisk in 1 cup of maize meal to form a smooth, thick paste. Reduce heat to low, cover, and simmer for 15-20 minutes, stirring occasionally, until cooked through and firm. Add more water if it becomes too thick. For a softer pap, add more water during cooking.

While the pap is cooking, heat the vegetable oil in a large skillet over medium heat. Add the chopped onion and sauté until softened, about 5 minutes.
