Shito Fried Yam with Eggs

- 3 cups Vegetable oil(for frying)

- 3 large Eggs
- 1/2 medium Onion(finely chopped)
- 1 medium Tomatoes(chopped (optional))

Rinse the yam cubes and pat them thoroughly dry.

Heat vegetable oil in a deep pot or fryer to 350°F (175°C).
