Shurbat Cadas (Somali Red Lentil Soup)

- 1.5 cups Red lentils(rinsed)
- 3 tablespoons Olive oil or ghee
- 1 large Onion(finely chopped)
- 4 medium Garlic cloves(minced)
- 1 large Carrots(diced)
- 1 medium Tomatoes(chopped)
- 1 small Bell pepper (red or green)(chopped)
- 1 teaspoon Cumin (ground)
- 1/2 teaspoon Turmeric powder
- 1/2 teaspoon Coriander (ground)
- 1/2 teaspoon Paprika or chili powder(optional, for heat)
- 8 cups Vegetable broth or water
- to taste Salt
- to taste Black pepper
- 1/4 cup Fresh cilantro(chopped, for garnish)

Heat olive oil or ghee in a large pot or Dutch oven over medium heat. Add the chopped onion and sauté until softened and translucent, about 5-7 minutes.
