Siga Wassa Koun Fonio
A hearty and flavorful stew featuring tender beef simmered with a rich peanut and tomato sauce, served over fluffy fonio. This dish combines the savory depth of slow-cooked beef with the creamy texture of peanut butter and the tang of tomatoes, creating a comforting and nutritious meal.

🧂 Ingredients
- 1 kg Beef stew meat(cut into 1-inch cubes)
- 3 tbsp Vegetable oil
- 2 large Onions(chopped)
- 4 large Garlic cloves(minced)
- 1 tsp Grated ginger
- 1 cup Canned crushed tomatoes((260g))
- 2 tbsp Tomato paste
- 4 cups Beef broth
- 0.75 cup Smooth peanut butter((195g))
- 2 tsp Herbes de Provence
- 0.25 tsp Cayenne pepper(or to taste)
- 1 tsp Salt(or to taste)
- 0.5 tsp Black pepper(freshly ground, or to taste)
- 1.5 cups Fonio
- 3 cups Water(for cooking fonio)

Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Add beef cubes and brown on all sides. Remove beef and set aside.

Add chopped onions to the pot and sauté until softened, about 5-7 minutes. Add minced garlic and grated ginger, and cook for another minute until fragrant.

Stir in crushed tomatoes and tomato paste, cooking for 2 minutes. Return the browned beef to the pot.

Pour in beef broth, add Herbes de Provence, cayenne pepper, salt, and black pepper. Bring to a boil, then reduce heat to low, cover, and simmer for 1 hour, or until beef is tender.

In a separate bowl, whisk together the peanut butter with a little warm water or broth until smooth. Stir the peanut butter mixture into the stew. Simmer uncovered for another 20-30 minutes, or until the sauce has thickened.

While the stew simmers, prepare the fonio. Rinse the fonio thoroughly under cold water. In a medium saucepan, combine fonio and 3 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 10-15 minutes, or until water is absorbed and fonio is fluffy.
