🧂 Ingredients

  • 500 g Mixed wild mushrooms(such as porcini, chanterelles, or morels, cleaned and sliced (leave small ones whole))
  • 150 g Pearl barley(rinsed)
  • 3 medium Potatoes(peeled and diced)
  • 2 medium Carrots(peeled and sliced)
  • 1 medium Celery stalk(sliced)
  • 1 large Onion(finely chopped)
  • 2 cloves Garlic cloves(minced)
  • 2 tbsp Olive oil
  • 1.5 l Vegetable broth
  • 100 ml White wine(optional)
  • 2 Bay leaves
  • 1 tsp Marjoram(dried)
  • to taste Salt
  • to taste Black pepper
  • for garnish Fresh parsley(chopped)
  • for serving Sour cream(optional)

    Heat olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and sauté until softened, about 5-7 minutes.

    Add the minced garlic, sliced carrots, and celery. Cook for another 5 minutes until slightly tender.

    Add the mixed wild mushrooms to the pot and cook until they release their liquid and start to brown, about 8-10 minutes.

    If using, pour in the white wine and let it simmer for 2-3 minutes until mostly evaporated.

    Add the rinsed pearl barley, diced potatoes, vegetable broth, bay leaves, and dried marjoram. Season with salt and pepper to taste.

    Bring the soup to a boil, then reduce the heat to low, cover, and simmer for 1 hour to 1 hour 15 minutes, or until the barley and potatoes are tender.
