Somali Vegetable Rice (Iskudhexkaris)

- 2 cups Basmati rice(rinsed and drained)
- 3 tbsp Vegetable oil
- 1 large Onion(finely chopped)
- 3 cloves Garlic(minced)
- 2 medium Carrots(diced)
- 1 large Potato(diced)
- 1 medium Green bell pepper(diced)
- 1 medium Tomato(diced)
- 3.5 cups Water or vegetable broth
- 1 tsp Ground cumin
- 1 tsp Ground coriander
- 0.5 tsp Turmeric powder

- 0.25 tsp Ground cinnamon

- 2 tbsp Fresh cilantro(chopped, for garnish)

Rinse the rice thoroughly under cold water until the water runs clear. Set aside to drain.

Heat the vegetable oil in a large pot or Dutch oven over medium heat. Add the chopped onion and sauté until softened and translucent, about 5-7 minutes.
