Sombi Koun
A comforting and subtly sweet millet porridge, often enjoyed for breakfast or as a light meal. It's made by simmering millet grains in water or milk until tender, then flavored with sugar, sometimes a hint of vanilla or cinnamon, and often topped with fresh fruit or nuts.

🧂 Ingredients
- 1 cup Millet Grains
- 4 cups Water or Milk(or a combination)
- 3-4 tbsp Sugar(or to taste)
- 1/4 tsp Salt
- 1/2 tsp Optional: Vanilla Extract
- 1/4 tsp Optional: Cinnamon
- various Optional Toppings(e.g., fresh fruit, nuts, honey)
👨🍳 Instructions
- 1
Rinse the millet grains thoroughly under cold running water until the water runs clear. This helps remove any dust or debris.
- 2
In a medium saucepan, combine the rinsed millet, water (or milk), and salt.
- 3
Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low, cover the saucepan, and simmer.
- 4
Cook for 30-35 minutes, or until the millet is tender and has absorbed most of the liquid. Stir occasionally to prevent sticking.
- 5
Once the millet is cooked and tender, stir in the sugar, vanilla extract, and cinnamon (if using). Cook for another 2-3 minutes, stirring until the sugar is dissolved and the porridge has thickened to your desired consistency.
- 6
Remove from heat. Let it stand for a few minutes before serving. The porridge will thicken further as it cools.
- 7
Serve warm in bowls. Garnish with fresh fruit, chopped nuts, or a drizzle of honey, if desired.
💡 Pro Tips
- ✓Adjust the amount of liquid to achieve your preferred porridge consistency.
- ✓Using milk instead of water will result in a creamier and richer porridge.
- ✓Ensure millet is well-rinsed to avoid a gummy texture.
🔄 Variations
- Add a tablespoon of peanut butter for a nutty flavor.
- Stir in some dried fruits like raisins or dates during the last 10 minutes of cooking.
