  • 1 kg Beef tripe(cleaned and cut into bite-sized pieces)
  • 500 g Beef bones(for broth)
  • 1 large Onion(chopped)
  • 1 large Bell pepper(chopped)
  • 4 medium Tomatoes(chopped)
  • 4 cloves Garlic(minced)
  • 2 medium Carrots(peeled and diced)
  • 2 medium Potatoes(peeled and diced)
  • 200 g Green beans(trimmed and cut)
  • 1/2 cup Cilantro(chopped)
  • 1 tsp Cumin
  • 1 tsp Oregano
  • to taste Salt
  • to taste Black pepper
  • 8 cups Water

    Rinse the tripe thoroughly. Place tripe and beef bones in a large pot, cover with water, and bring to a boil. Skim off any foam. Reduce heat, cover, and simmer for 2 hours, or until the tripe is tender.

    Remove the tripe and bones from the pot. Strain the broth and set aside. Discard the bones. Cut the tripe into bite-sized pieces.
