- 1 kg Beef tripe(cleaned and cut into bite-sized pieces)
- 500 g Beef bones(for broth)
- 1 large Onion(chopped)
- 1 large Bell pepper(chopped)
- 4 medium Tomatoes(chopped)
- 4 cloves Garlic(minced)
- 2 medium Carrots(peeled and diced)
- 2 medium Potatoes(peeled and diced)
- 200 g Green beans(trimmed and cut)
- 1/2 cup Cilantro(chopped)
- 1 tsp Cumin
- 1 tsp Oregano

- 8 cups Water

Rinse the tripe thoroughly. Place tripe and beef bones in a large pot, cover with water, and bring to a boil. Skim off any foam. Reduce heat, cover, and simmer for 2 hours, or until the tripe is tender.

Remove the tripe and bones from the pot. Strain the broth and set aside. Discard the bones. Cut the tripe into bite-sized pieces.

In the same pot, sauté the chopped onion, bell pepper, and minced garlic in a little oil until softened.

Return the tripe pieces to the pot. Pour in the reserved broth and add enough water to cover everything. Bring to a simmer.
