  • 3 large Tomatoes(ripe, chopped)
  • 1 large Cucumbers(peeled and chopped)
  • 2 medium Bell peppers(any color, deseeded and chopped)
  • 1/2 medium Red onion(thinly sliced)
  • 200 g Halloumi cheese(sliced into 1cm thick pieces)
  • 1/4 cup Fresh parsley(chopped)
  • 3 tbsp Olive oil
  • 1 tbsp Red wine vinegar
  • to taste Salt
  • to taste Black pepper(freshly ground)
