- 3 large Tomatoes(ripe, chopped)
- 1 large Cucumbers(peeled and chopped)
- 2 medium Bell peppers(any color, deseeded and chopped)
- 1/2 medium Red onion(thinly sliced)
- 200 g Halloumi cheese(sliced into 1cm thick pieces)
- 1/4 cup Fresh parsley(chopped)
- 3 tbsp Olive oil
- 1 tbsp Red wine vinegar
