Soso Ya Sauce
Soso Ya Sauce is a flavorful Malian chicken stew characterized by its rich, savory broth, often seasoned with a blend of aromatic spices. It's a comforting dish typically served with rice or a starchy side like fufu.

🧂 Ingredients
- 1 kg Whole chicken(cut into pieces, washed)
- 1 large Onion(chopped)
- 4 cloves Garlic cloves(minced)
- 1 teaspoon Ginger(minced)
- 1 tablespoon Tomato paste
- 2 cubes Chicken bouillon cubes
- 4 cups Water
- 2 tablespoons Vegetable oil
- 1 teaspoon Black pepper
- 1 teaspoon Paprika
- 0.5 teaspoon Oregano
- 0.5 teaspoon Basil
- 0.25 teaspoon Nutmeg
- 1 teaspoon All-purpose seasoning
- 0.5 teaspoon Chili powder(optional, adjust to taste)
- 1 teaspoon Salt(or to taste)
- 2 tablespoons Fresh parsley(chopped, for garnish)
👨🍳 Instructions
- 1
Season the chicken pieces with salt, black pepper, paprika, oregano, basil, nutmeg, and all-purpose seasoning. Let it marinate for at least 15 minutes.
- 2
Heat the vegetable oil in a large pot or Dutch oven over medium-high heat. Add the seasoned chicken pieces and brown them on all sides. Remove the chicken from the pot and set aside.
- 3
In the same pot, add the chopped onion and sauté until softened and translucent, about 5-7 minutes.
- 4
Add the minced garlic and ginger to the pot and cook for another minute until fragrant.
- 5
Stir in the tomato paste and cook for 1-2 minutes, stirring constantly.
- 6
Pour in the water and add the chicken bouillon cubes. Bring the mixture to a boil, scraping up any browned bits from the bottom of the pot.
- 7
Return the browned chicken pieces to the pot. Add chili powder if using. Reduce the heat to low, cover, and simmer for 30-40 minutes, or until the chicken is cooked through and tender.
- 8
Taste and adjust seasoning with salt if needed. The sauce should be rich and flavorful.
- 9
Serve hot, garnished with fresh chopped parsley, with rice or fufu.
💡 Pro Tips
- ✓For a deeper flavor, you can marinate the chicken for a few hours or overnight in the refrigerator.
- ✓Adjust the chili powder to your spice preference.
- ✓If the sauce is too thin, you can simmer it uncovered for a few extra minutes to reduce it.
🔄 Variations
- Add other vegetables like diced tomatoes, bell peppers, or carrots along with the onions.
- Use chicken broth instead of water for a richer flavor.
