  • 1 cup Millet flour
  • 4 cups Water(plus more if needed)
  • 500 g Mixed leafy greens(such as spinach, collard greens, or kale, roughly chopped)
  • 4 tablespoons Peanut butter(unsweetened)
  • 1 medium Onion(finely chopped)
  • 2 Garlic cloves(minced)
  • 1 tablespoon Vegetable oil
  • to taste Salt
  • 1 tablespoon Groundnut oil (optional)(for finishing)

    In a pot, whisk together millet flour and 2 cups of water to form a smooth paste. Gradually whisk in the remaining 2 cups of water.

    Place the pot over medium heat and bring to a boil, stirring constantly to prevent lumps. Once boiling, reduce heat to low and simmer for about 10-15 minutes, stirring occasionally, until the millet porridge thickens.
