South Sudan Millet and Greens Stew (Wala-Wala inspired)
A nourishing and earthy stew made with millet, a variety of leafy greens, and often enriched with peanut butter for a creamy texture and added protein. This dish is a staple, providing essential nutrients and a comforting taste of home.

🧂 Ingredients
- 1 cup Millet flour
- 4 cups Water(plus more if needed)
- 500 g Mixed leafy greens(such as spinach, collard greens, or kale, roughly chopped)
- 4 tablespoons Peanut butter(unsweetened)
- 1 medium Onion(finely chopped)
- 2 Garlic cloves(minced)
- 1 tablespoon Vegetable oil

- 1 tablespoon Groundnut oil (optional)(for finishing)

In a pot, whisk together millet flour and 2 cups of water to form a smooth paste. Gradually whisk in the remaining 2 cups of water.

Place the pot over medium heat and bring to a boil, stirring constantly to prevent lumps. Once boiling, reduce heat to low and simmer for about 10-15 minutes, stirring occasionally, until the millet porridge thickens.

While the millet is cooking, heat vegetable oil in a separate pan over medium heat. Add chopped onion and sauté until softened, about 5 minutes.
