Svanetian Salt Blend
A fragrant and flavorful spice blend originating from the Svaneti region of Georgia, traditionally used as a seasoning for various dishes or as a salt substitute. It features a complex aroma and taste from a mix of salt, garlic, and mountain herbs and spices.

🧂 Ingredients
- 6.5 heaped tbs Coarse white salt
- 150 g Garlic
- 2 heaped tbs Dried coriander
- 1 heaped tbs Dried dill
- 1 heaped tbs Blue fenugreek
- 1 heaped tbs Dried red pepper (paprika)
- 1 heaped tbs Dried marigold (calendula)
- 0.5 heaped tbs Dried cumin (wild cumin/gitsruli)
👨🍳 Instructions
- 1
Peel the garlic cloves. If using whole dried red peppers, remove the seeds to control the spice level.
- 2
Crush the garlic cloves. For a smoother texture, a meat grinder or food processor can be used. If grinding by hand, use a mortar and pestle.
- 3
In a bowl, thoroughly mix all the dry ingredients: coarse salt, dried coriander, dried dill, blue fenugreek, dried red pepper, dried marigold, and dried cumin.
- 4
Add the crushed garlic to the dry spice and salt mixture. Use your fingers to mix everything together until well combined and the mixture feels slightly moist.
- 5
Store the Svanetian salt blend in a dry, cool place in an airtight glass jar. It can be used as a condiment instead of table salt or as a flavoring when cooking.
