  • 6.5 heaped tbs Coarse white salt
  • 150 g Garlic
  • 2 heaped tbs Dried coriander
  • 1 heaped tbs Dried dill
  • 1 heaped tbs Blue fenugreek
  • 1 heaped tbs Dried red pepper (paprika)
  • 1 heaped tbs Dried marigold (calendula)
  • 0.5 heaped tbs Dried cumin (wild cumin/gitsruli)

    Peel the garlic cloves. If using whole dried red peppers, remove the seeds to control the spice level.

    Crush the garlic cloves. For a smoother texture, a meat grinder or food processor can be used. If grinding by hand, use a mortar and pestle.

    In a bowl, thoroughly mix all the dry ingredients: coarse salt, dried coriander, dried dill, blue fenugreek, dried red pepper, dried marigold, and dried cumin.
