Taiwanese Cold Sesame Noodles (Ma Jiang Mian) - Taiwan traditional dish

🧂 Ingredients

  • 400 g Noodles(e.g., egg noodles, udon, or spaghetti)
  • 4 tbsp Sesame paste
  • 4 tbsp Hot water
  • 2 tsp Soy sauce
  • 2 tsp Black vinegar(or rice vinegar)
  • 1.5 tbsp Sugar
  • 4 cloves Garlic(finely minced)
  • 1 medium Cucumber(julienned)
  • 1/2 medium Carrot(julienned)
  • 2 large Eggs(for omelet, optional)
  • 1 cup Bean sprouts(blanched, optional)

👨‍🍳 Instructions

  1. 1

Cook noodles according to package directions. Drain and rinse under cold water to prevent sticking. Toss with a little sesame oil if desired.

  2. 2

In a bowl, whisk together sesame paste and hot water until smooth. Stir in soy sauce, black vinegar, sugar, and minced garlic. Mix well to create the sauce.

  3. 3

If making egg omelets, beat eggs with a pinch of salt, then cook into thin crepes in a lightly oiled pan. Let cool and slice into thin shreds.

  4. 4

In a large bowl, combine the cooked noodles, julienned cucumber, julienned carrot, blanched bean sprouts (if using), and egg shreds (if using).

  5. 5

Pour the sesame sauce over the noodle mixture and toss gently to combine. Serve immediately.
