Tajine Malsi (Tunisian Chicken and Vegetable Tajine)

- 800 g Chicken thighs(bone-in, skin-on)
- 2 large Onions(thinly sliced)
- 2 medium Potatoes(peeled and cubed)
- 2 medium Carrots(peeled and sliced)
- 1 cup Green peas(fresh or frozen)
- 2 medium Tomatoes(chopped)
- 4 cloves Garlic(minced)
- 4 tbsp Olive oil
- 1 tsp Turmeric
- 1 tsp Cumin
- 1 tsp Coriander(ground)
- 1 tsp Paprika
- 0.5 tsp Cinnamon(ground)
- 0.25 tsp Saffron threads(soaked in 2 tbsp warm water)
- 1 tsp Salt(or to taste)
- 0.5 tsp Black pepper(freshly ground)
- 0.25 cup Fresh cilantro(chopped, for garnish)
- 0.25 cup Fresh parsley(chopped, for garnish)

In a large bowl, combine chicken thighs, sliced onions, cubed potatoes, sliced carrots, chopped tomatoes, minced garlic, olive oil, turmeric, cumin, coriander, paprika, cinnamon, salt, and pepper. Mix well to coat the chicken and vegetables evenly.
