Tongan Pork and Taro Leaf Bake (Lefakau)
A hearty and flavorful Tongan dish featuring tender pork and vegetables slow-cooked and steamed within taro leaves, often further wrapped in banana leaves for added aroma and moisture. This method infuses the ingredients with a rich, earthy flavor.

- 500 g Pork shoulder or belly(cut into 1-inch chunks)
- 2 tbsp Vegetable oil
- 1 large Onion(chopped)
- 2 cloves Garlic(minced)
- 1 large Carrot(sliced)
- 1 medium Bell pepper(chopped)
- 2 medium Tomatoes(chopped)
- 1 cup Coconut milk
- 2 tbsp Soy sauce
- 1 tsp Salt(or to taste)
- 0.5 tsp Black pepper(or to taste)
- 15 large Taro leaves(washed and stems removed)
- 6 large Banana leaves(optional, for wrapping)

Heat vegetable oil in a large pot or Dutch oven over medium heat. Add chopped onion and minced garlic, sautéing until softened and fragrant, about 3-5 minutes.
