Turkmen Kelyana Gozleme
A savory Turkmen flatbread filled with a mixture of finely chopped meat (often lamb or beef), onions, and herbs, then pan-fried until golden brown and slightly crispy. It's a popular street food and a comforting home-style meal.

- 250 ml Warm water
- 1 tsp Salt
- 400 g Ground lamb or beef
- 1 large Onion(finely chopped)
- 0.5 cup Fresh cilantro(chopped)
- 0.5 cup Fresh dill(chopped)
- 1 tsp Black pepper(freshly ground)
- 0.5 tsp Cumin
- 3-4 tbsp Vegetable oil or butter(for frying)

In a large bowl, combine flour and salt. Gradually add warm water, mixing until a soft dough forms. Knead for 8-10 minutes until smooth and elastic. Cover and let rest for 20 minutes.

While the dough rests, prepare the filling. In a separate bowl, combine the ground meat, finely chopped onion, cilantro, dill, black pepper, and cumin. Mix well.

Divide the dough into 6 equal portions. Roll each portion into a thin, round flatbread (about 8-10 inches in diameter).

Place a generous amount of the meat filling onto one half of each flatbread, leaving a small border around the edges.

Fold the other half of the flatbread over the filling, creating a half-moon shape. Pinch the edges firmly to seal, ensuring no filling escapes during cooking.
