- 4 bone-in, skin-on Chicken thighs(cut into pieces)
- 2 tbsp Vegetable oil
- 1 large Onion(finely chopped)
- 5 cloves Garlic(minced)
- 1 inch knob Ginger(grated)
- 400 g Tomatoes(diced or crushed)
- 2 tbsp Tomato paste
- 0.5 cup Smooth peanut butter
- 3 cups Chicken broth
- 1 tsp Cumin powder
- 1 tsp Coriander powder
- 0.5 tsp Turmeric powder
- 0.25 tsp Cayenne pepper(or to taste)
- 1 tsp Salt(or to taste)
- 0.25 cup Fresh cilantro(chopped, for garnish)

Heat vegetable oil in a large pot or Dutch oven over medium heat. Add the chopped onion and sauté until softened, about 5-7 minutes.
