Waadtländer Käsküechli
Savory cheese fritters from the Vaud region, characterized by their crispy exterior and a soft, cheesy interior, often served as a snack or appetizer.

🧂 Ingredients
- 200 g Gruyère cheese(grated)
- 100 g Emmental cheese(grated)
- 150 g All-purpose flour
- 2 large Eggs
- 150 ml Milk
- 1 tsp Baking powder
- 0.5 tsp Salt
- 0.25 tsp Black pepper
- a pinch Nutmeg
- for frying Vegetable oil

In a large bowl, combine the grated Gruyère and Emmental cheeses.

In a separate bowl, whisk together the flour, baking powder, salt, pepper, and nutmeg.

In another bowl, whisk the eggs and milk. Gradually add this to the dry ingredients, mixing until a smooth batter forms.

Fold the grated cheeses into the batter until well combined.

Heat about 2-3 cm (1 inch) of vegetable oil in a deep pan or pot over medium-high heat to around 170°C (340°F).

Carefully drop spoonfuls of the batter into the hot oil, being careful not to overcrowd the pan. Fry for 3-4 minutes per side, until golden brown and puffed up.

Remove the Käsküechli with a slotted spoon and drain on paper towels.
