Zimbabwean Chicken Stew with Peanut Butter

- 2 large Onions(chopped)
- 400 g Tomatoes(chopped or crushed)
- 4 cloves Garlic(minced)
- 1 tbsp Ginger(grated)
- 4 tbsp Smooth Peanut Butter
- 2 tbsp Vegetable Oil
- 500 ml Chicken Broth or Water
- to taste Salt

- 1 tsp Curry Powder
- 1 Bay Leaf

Season the chicken pieces generously with salt and pepper.

Heat the vegetable oil in a large pot or Dutch oven over medium-high heat. Brown the chicken pieces on all sides until golden. Remove the chicken from the pot and set aside.
