Stuffed Zucchini with Meat
Tender zucchini boats filled with a savory mixture of ground meat, rice, and aromatic herbs, then simmered in a rich tomato sauce. A flavorful and satisfying dish popular across the Balkans.

- 4 pieces Medium zucchini
- 400 g Ground beef(or a mix of beef and lamb)
- 100 g Short-grain rice(rinsed)
- 1 medium Yellow onion(finely chopped)
- 2 cloves Garlic cloves(minced)
- 2 tbsp Fresh parsley(chopped)
- 2 tbsp Tomato paste
- 400 ml Water
- 2 tbsp Vegetable oil(plus more for sautéing)
- 1 tsp Salt(or to taste)
- 0.5 tsp Black pepper(freshly ground, or to taste)
- 1 tsp Paprika
- 0.5 tsp Seven spice (optional)

Wash the zucchini. Trim off the ends and cut each zucchini in half lengthwise. Scoop out the seeds and some of the flesh to create a cavity for the filling, leaving about a 1 cm border. Reserve the scooped-out zucchini flesh if desired for another dish.

In a bowl, combine the ground meat, rinsed rice, chopped onion, minced garlic, chopped parsley, salt, pepper, paprika, and seven spice (if using). Mix well with your hands until all ingredients are evenly distributed.

In a separate bowl, whisk together the tomato paste, water, and any remaining salt and pepper. Pour this sauce over the zucchini in the pot.
