🧂 食材
- 4 large Olive oil(divided, plus more if desired for richness)
- 40g (approx. 3 tbsp) Red onion(finely chopped)
- 1 tablespoon Garlic(minced)
- 2 pieces (approx. 20-25 cm diameter each) Tomatoes(diced)
- 1/2 medium Green chili or Jalapeño(finely chopped, seeds removed for less heat)
- to taste Berbere spice blend(adjust to taste)
👨🍳 步骤
- 1
Sauté Aromatics: Heat 2 tablespoons of olive oil in a large skillet or frying pan over medium heat. Add the finely chopped red onion and sauté until it becomes translucent and begins to soften, about 4-5 minutes. Stir in the minced garlic and chopped green chili (or jalapeño) and cook for another minute until fragrant.
⏱️ 2 minutes - 2
Cook Tomatoes and Spices: Add the diced tomatoes to the skillet and cook, stirring occasionally, until they soften and begin to break down, releasing their juices, about 5-7 minutes. Stir in the berbere spice blend and optional ground cardamom. Cook for 1-2 minutes, stirring constantly, to toast the spices and release their aromas.
⏱️ 5-7 minutes - 3
Prepare Eggs: While the vegetables are cooking, in a medium bowl, whisk together the lightly beaten eggs with salt and freshly ground black pepper. Ensure they are well combined.
⏱️ 1 minute - 4
Scramble Eggs: Push the cooked vegetable mixture to one side of the skillet, creating a space. Pour the seasoned eggs into the empty space. Let them set slightly before gently scrambling with a spatula until they are almost cooked through but still slightly moist.
⏱️ 1-2 minutes - 5
Combine and Finish: Gently fold the scrambled eggs into the vegetable mixture. If the pan seems dry, add the remaining 1 tablespoon of olive oil for richness. Continue to cook for another minute, allowing the flavors to meld.
⏱️ 3-4 minutes - 6
Serve: Remove the Enqulal Firfir from the heat. Garnish generously with freshly chopped cilantro. Serve hot, ideally with injera or your favorite flatbread.

💡 专业技巧
- ✓For a richer flavor, consider using Niter Kibbeh (Ethiopian spiced clarified butter) instead of regular olive oil for sautéing the aromatics.
- ✓Adjust the amount of green chili or berbere spice to control the heat level according to your preference.
- ✓If you prefer a less spicy dish, remove the seeds and membranes from the green chili before chopping.
- ✓This dish is excellent for using up leftover injera; simply tear it into bite-sized pieces and stir it into the firfir during the last minute of cooking to absorb the flavors.
