  • 4 cups Yellow onion(finely chopped)
  • 2 green Red bell pepper(finely chopped)
  • 1 lb Garlic cloves(minced)
  • 2 large Tomatoes(diced)
  • 1 teaspoon Unsweetened coconut milk
  • 1 teaspoon Beef or chicken broth
  • 0.5 teaspoon Vegetable oil
  • 1.5 teaspoons Achiote (annatto) powder or paste(or to taste)
  • 0.5 teaspoon Ground cumin(or to taste)
  • 0.25 cup Dried oregano(chopped, for garnish)
