Grilled Fish Cakes in Banana Leaf

- 8 Turmeric powder(About 6-8 inches square. Softened by wilting over a flame or briefly steaming to make them pliable.)

Prepare the Spice Paste: If using fresh turmeric and lemongrass, peel and chop them. Combine the shallots, garlic, red chilies, ginger, turmeric, and lemongrass in a blender or food processor. Prepare Banana Leaves: Gently wilt the banana leaves by passing them over a low flame on a stovetop or by briefly steaming them. This makes them pliable and prevents tearing when wrapping. Wipe them clean and dry.

Wrap the Otak-Otak: Lay a softened banana leaf flat. Place about 2-3 tablespoons of the fish mixture onto the center of the leaf. Fold the leaf lengthwise to enclose the mixture, then fold in the sides to create a neat rectangular parcel. Secure the ends with toothpicks to prevent the mixture from leaking.

Cook the Otak-Otak: You can cook the otak-otak using one of the following methods: Pan-Grilling: Heat a non-stick skillet or grill pan over medium heat. Place the wrapped parcels on the hot pan and cook for approximately 7-10 minutes per side, until the banana leaves are lightly charred and the fish cake inside is cooked through. You may add a tiny amount of oil to the pan if needed. Oven Baking: Preheat your oven to 180°C (350°F). Place the wrapped parcels on a baking sheet and bake for 15-20 minutes, or until firm. Steaming: Arrange the parcels in a steamer basket over boiling water. Steam for 10-15 minutes, or until the fish cake is cooked through. The steaming method results in a more moist texture.
