Matembele Stew
Sweet Potato Leaf Stew
Matembele refers to sweet potato leaves, a nutritious and common green vegetable in Tanzania. This stew is a flavorful and hearty dish, often prepared with onions, tomatoes, and sometimes with added protein like fish or meat, making it a versatile and satisfying meal.

🧂 食材
- 1 kg Fresh sweet potato leaves (matembele)(about 5-7 bundles, tough stems removed)
- 2 medium Onions(chopped)
- 3 medium Tomatoes(chopped)
- 3 cloves Garlic(minced)
- 1 small Red chili pepper(finely chopped (optional, adjust to taste))
- 3 tbsp Vegetable oil
- 1 cup Water or vegetable broth
- to taste Salt
- 1 (optional) Chicken bouillon cube(crumbled)
👨🍳 步骤
- 1
Thoroughly wash the sweet potato leaves multiple times to remove any sand or dirt. Remove any tough stems. You can either chop them finely or rub them between your hands to break them down, which helps them cook faster and become tender.
- 2
Heat the vegetable oil in a large pot or Dutch oven over medium heat. Add the chopped onions and sauté until softened and translucent, about 5-7 minutes.
- 3
Add the minced garlic and chopped red chili (if using) and cook for another minute until fragrant.
- 4
Add the chopped tomatoes and cook until they start to break down, about 5 minutes.
- 5
Add the prepared sweet potato leaves to the pot. Stir well to combine with the onion, garlic, and tomato mixture. The leaves will seem voluminous at first but will wilt down.
- 6
Pour in the water or vegetable broth and add the crumbled bouillon cube (if using). Season with salt to taste.
- 7
Bring the stew to a simmer, then reduce the heat to low, cover, and cook for 20-25 minutes, or until the leaves are tender. Stir occasionally.
- 8
Serve hot, typically with ugali, rice, or fufu.
