  • 3 tbsp Olive oil
  • 2 large Onions(chopped)
  • 3 medium Carrots(peeled and chopped)
  • 2 medium Celery stalks(chopped)
  • 4 minced Garlic cloves
  • 2 tbsp Tomato paste
  • 250 ml Dry white wine
  • 750 ml Lamb or beef broth
  • 4 Fresh thyme sprigs
  • 2 Fresh rosemary sprigs
  • 1 Bay leaf
  • 500 g Potatoes(peeled and cut into chunks)

  • 2 tbsp Fresh parsley(chopped, for garnish)
