Sweet and chewy rolls made from dates, nuts, and often flavored with spices like cinnamon or cardamom. These are a popular treat, especially during holidays.

- 1 cup Walnuts
- 1/2 cup Almonds
- 1/4 cup Shredded coconut(unsweetened, plus more for rolling)
- 1 tsp Cinnamon
- 1/2 tsp Cardamom(optional)
- 1 tsp Vanilla extract
- 1 tsp Orange zest(optional)

Line a baking sheet with parchment paper.

In a food processor, combine walnuts and almonds. Pulse until coarsely chopped.

Add the pitted Medjool dates, shredded coconut, cinnamon, cardamom (if using), vanilla extract, and orange zest (if using) to the food processor.

Process until the mixture starts to clump together and forms a sticky dough. You may need to scrape down the sides of the food processor a few times.

Place extra shredded coconut on a plate for rolling.

Take about 1-2 tablespoons of the date mixture and roll it into a log shape. Then, roll the log in the shredded coconut until evenly coated.
