- 2 cans (13.5 oz each) Coconut milk
- 4 cups Vegetable broth
- 1 medium Onion(chopped)
- 1 red Bell pepper(chopped)
- 3 cloves Garlic cloves(minced)
- 2 medium Tomatoes(diced)
- 1/2 cup Cilantro(chopped, plus more for garnish)
- 2 tbsp Lime juice
- 2 tbsp Vegetable oil
- to taste Salt
- to taste Black pepper
- 1/4 tsp Optional: Scotch bonnet pepper(minced, for heat)
