- 2 lbs Chicken pieces(bone-in, skin-on (thighs and drumsticks recommended))
- 2 tbsp Vegetable oil
- 1 large Onion(chopped)
- 4 cloves Garlic(minced)
- 1 medium Bell pepper(any color, chopped)
- 2 medium Tomatoes(chopped)
- 2 tbsp Tomato paste
- 2 cups Chicken broth
- 1 tbsp Thyme(fresh, chopped or 1 tsp dried)
- 4-5 whole Allspice berries

- 2 stalks Scallions(chopped, for garnish)

Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Brown chicken pieces on all sides until golden. Remove chicken and set aside.
