Apem with Garden Egg Stew

- 400 g Garden eggs (eggplant)(chopped)
- 1 medium Onions(chopped)
- 2 medium Tomatoes(chopped)
- 1 or to taste Scotch bonnet or habanero pepper(chopped)
- 2 cloves Garlic(minced)
- 1/2 inch piece Ginger(grated)
- 3 tablespoons Palm oil or vegetable oil
- 50 g Smoked fish or dried shrimp (optional)
- 1 Seasoning cubes

Peel the unripe plantains, cut them into chunks, and boil in salted water until very tender. Drain most of the water, leaving a little at the bottom. Mash the plantains thoroughly with a wooden spoon or masher until smooth, forming the 'Apem'.

While the plantains are boiling, prepare the stew. Heat the palm oil in a separate pot over medium heat. Add the chopped onions and sauté until softened.
